Pizza Dough

  • all purpose flour
    400 g
  • instant yeast
    7 g
  • salt
    1/2 tbsp
  • semolina (griesmeel)
    100 g
  • sugar
    1/2 tbsp
  • water
    325 ml

    This is a basic pizza dough inspired from Jamie's Italy. He's very specific about the method, but for me bread is bread and I take things a little more loosely. Makes 3 to 4 pizzas.

    In a bowl add all purpose flour , semolina (griesmeel) , salt , instant yeast and sugar . Mix these together with a whisk.

    Add water in parts, first about 2/3rds and then adding bit by bit. Mix with a hand mixer with dough hooks, your kitchenaid or just your hands. You might not need all water, or you might need a little more: this depends on the type of flour you use (more specifically the protein and starch content).

    Knead for 8 minutes.

    Cover the top of the dough with some oil (olive oil tastes nice if you have), and then use a dough scraper to loosen the sides of the ball from the bowl and pull it out flipping it over. Run it through the bowl to cover all sides.

    Cover the bowl with plastic and let rise for at least 15 to 30 minutes.

    Divide into 3 or 4 balls depending on the size of your pizza, roll them so the surface of them is tight and let rest for another 15 to 30 minutes.

    Roll out into your pizza bases and top with whatever! Bake how your heart desires.
